How To Teach your kids to eat foods they are afraid of (the “green things” Edition)
The point of all of this is to get someone you love (you love them, even when they drive you nuts) to "make do" or handle when they see food they don't like on their plate. This orzo pasta with parmesan cheese and fresh spinich is so creamy and elegant and one of my favorite recipes. Its also a great way to teach your kids how to handle the "green things" that are touching on the plate.
Orzo pasta with parmesan cheese and fresh spinach
· 1 ½ cups orzo pasta cooked according to package in about 4 cups of heavily salted water
· 2 Tablespoons butter
· ½ cup parmesan cheese
· 2 large handfuls of fresh baby spinach
1. Reserve ½ cup of cooking liquid from the cooked pasta.
2. Drain the remaining pasta.
3. Add Cheese and butter.
4. Stir until combined.
5. If it seems too thick, add some of the reserved cooking liquid to thin the sauce.
6. Add the spinach and continue to stir until the spinach is wilted.
7. Serve immediately.
