Chicken: Food Prep for the week ahead

Did you ever want to make a great tasting but neutral flavored chicken that becomes extremely versitle for the week? I have that recipe for you. Its called Cornell Chicken invented by a professor from Cornell University. My recipe is slightly different from the original but I love it so much and its so easy to prepare!

 
 

Cornell Chicken Marinade

·      1 cup vinegar

·      1 cup oil

·      1 egg

·      1 tablespoon salt

·      2 teaspoon black pepper

·      1 tablespoon poultry seasoning

·      2 to 3 pounds chicken, bone in or boneless

 

1.     In a plastic Ziploc bag combine the first 6 ingredients. 

2.     Shake the bag gently to combine all ingredients

3.     Add the chicken to the bag

4.     Marinate in the refrigerator for a minimum of 2 hours but as long as 24 hours. 

5.     Bake in the oven for 30 min or grill.  Make sure the internal temperature reaches 165 degrees F.
