Tortellini Soup with Italian Sausage and Spinach
· 1 tablespoon oil
· 1 pound ground Italian sausage
· ½ cup diced onion
· 28 ounce can crush tomatoes
· 32 ounces vegetable or chicken broth
· 2 table spoons fresh chopped basil
· Salt and pepper to taste
· 2 cups packed fresh spinach
· Serve with bread and salad
Spinach Salad Dressing
· ½ onion
· 1/3 cup oil
· 2/3 cup sugar
· ½ cider vinegar
For the soup
1. Sauté onions in a tablespoon of oil
2. Add sausage to pan and continue to brown
3. Add in tomatoes, broth, salt and pepper. Let simmer for 10 minutes
4. Add tortellini cook according to package directions
5. Stir in basil and spinach
6. Serve with grated parmesan cheese
Salad Dressing
Combine all ingredients in a blender and gently pulse until combined. Pour over additional spinach left from package.
