marshmallow Magic

Happy 2021 everyone. Why should you make your own marshmallows? BECAUSE THEY ARE FREAKING AMAZING! They are a great way to celebrate the season of hot chocolate or make the world’s greatest riced krispie treat. It's really easy and completely worth it! How to Make Homemade Marshmallows

·      1/2 cup water

·      3 packets of unflavored gelatin

·      1/8th tsp salt

·      1/2 cup water

·      2 1/4 cup sugar

·      1 cup cornstarch

·      1 tsp vanilla (actually don’t add it in my opinion)

·      CORNSTARCH and lots of it

 

1.    Combine the first 3 ingredients in a bowl in a mixer and let sit.

2.     In a heavy pot fitted with a candy thermometer combine all ingredients except cornstarch. 

3.    Combine and dissolve over medium high heat until the temperature reaches 240 degrees or soft ball stage on a candy thermometer. CAUTION, VERY HOT! 

4.    Gradually poor the molten sugar into the mixer while on low speed.

5.     Once all the sugar is combined into the mixer, gradually turn up the speed to high and beat for 3 to 3 minutes.

6.    Pour the whipped marshmallow out on a sprayed cooking surface (I like parchment paper) covered with cooking spray and cornstarch. Let cool 4 hours or overnight 

7.    Use more cornstarch to cover top and cut into squares or cookie cutter shapes. 

8.    Serve with your best hot chocolate.
