Split Pea Soup with Ham

Why should you do this? Because it's green! It’s loaded with fiber and protein. Even if your kids don’t like it, they will smell it, and see it. It will expose them to trying it the future. These are the reasons that make this soup so great. Plus, you get a healthy plant-based meal all week with very little effort! 

 
 

Split Pea Soup with Ham

·      3 tablespoons olive oil

·      1pound dried green peas rinsed and sorted through

·      1 cup diced onion

·      2 carrots peeled and roughly diced

·      2 cloves garlic chopped

·      8 cups chicken or vegetable stock (low sodium)

·      1 ham bone (optional)

·      1 tablespoon white wine vinegar

·      1 tablespoon dried dill

·      salt and pepper to taste

 

1.    In a large pot add olive oil, onion, carrots and sauté on medium high heat until soft and translucent. 

2.    Add garlic and sauté for one to two minutes more. 

3.    Add the dried peas, stock and optional ham bone. 

4.    Cook for 1 o 2 hours until the peas are soft. 

5.    Finish the soup with vinegar and dill. Adjust salt to taste. 

6.    Eat it in front of your kids.
