How to roast a Turkey

This is how I roast a turkey that tastes awesome and makes a fabulous gravy. It's a holiday video which means something went wrong. SOMETHING ALWAYS GOES WRONG. Get over it! Keep going. It's going to be fine. My video is about how to get over it and keep going.

 
 

Turkey:

·      1 whole fresh turkey giblets removed patted dry 

·      1 apple quartered 

·      1 onion quartered 

·      4 stalks of celery 

·      1/2 cup of butter softened or room temperature 

·      2 tablespoons salt 2 tsp thyme 

Pan Gravy: 

·      1/2 cup of white wine 

·      1/4 cup flour 

·      1/3 cup water 

·      salt and pepper if needed 

1.    Preheat oven to 425 degrees. combine butter salt and thyme in a small bowl and set aside. 

2.    Place turkey in a roasting pan with rack liberally sprayed with cooking spray or it will stick.

3.    Gently pull the skin away from the meat and insert butter mixture underneath the skin. 

4.    Add additional mixture on top of skin and around leg pieces. 

5.    Alternate apple and onion pieces inside the cavity, add celery in remaining spaces. 

6.    Turn turkey breast side down in pan and place in oven to roast for 25 minutes. 

7.    Turn oven down to 325 and check after 1 and 1/2 hours. 

8.    Using a meat thermometer check temp to 160 degrees F. 

9.    Turn the turkey breast side up and roast until 160 degrees has been reached. 

10. Remove from oven to rest 

Pan gravy: 

1.    Strain pan juices into a pot.

2.    Skim off extra fat and bring pot to a boil. 

3.    Add wine. 

4.    Continue to cook. combine flour and water in a separate bowl and whisk together. 

5.    Gradually add the flour mixture to the cooking liquid while stirring. 

6.    Continue to stir until desired thickness is achieved.

7.    Adjust seasoning as needed. Carve bird and serve with gravy.
