How to make High Protein Mac & Cheese in an Instant Pot — picky-eater friendly — 27g protein per cup

Sometimes I get a request for a modification of a recipe to get more protein into a classic recipe and see if we can make it tolerable. This recipe is way more than tolerable… it’s delicious, and it has 27g protein per cup!!

 
 

Instant Pot High Protein Mac n Cheese

·      1 pound elbow macaroni

·      Kosher salt to taste about 2 tablespoons in water

·      4 cups water

 

·      In a blender

·      12 ounces cottage cheese

·      2 scoops unflavored protein powder

·      1./3 cup water

·      Optional 1//4 tsp dry mustard

 

·      2 Tbsp unsalted butter

·      3 cups shredded cheese

 

1.     Add macaroni, water and salt to instant pot.

2.     Follow your manufacturer’s directions for manual settings for 4 minutes. 

3.     Meanwhile in a blender add cottage cheese, protein powder and water.

4.     Blend like the world depended on it. Completely smooth

5.     After a quick release of the steam from the instant pot add the cheese mixture and shredded cheese and butter. 

6.     Stir to combine

7.     Serve hot. 

8.     Makes 26 grams of protein per serving.
