STrAWBERRY shortCAKE
This video is about strawberry shortcake and dessert in general. It is part of a meal. It should not be treated as a reward or a punishment but part of a meal. It can contribute to the nutritional value of the meal. I like this recipe because it can be modified to allow family members with different nutritional needs to particiapte in the same dessert.
Strawberry Shortcake
· Strawberries
· 3 pounds strawberries washed and hulled
· ½ cup sugar
· Juice of a ¼ of a lemon
Shortcake
· 1 1/3 cup all-purpose flour
· 2 tablespoons sugar
· ¼ tsp salt
· 21/2 tsp baking powder
· 1 cup heavy cream
Whipped Cream
· 1 cup heavy cream
· 1 tsp vanilla
· 1 Tablespoon sugar
1. Combine the first three ingredients and stir/ slightly smash the strawberries to create a juice. Set bowl aside.
2. For the shortcakes, combine the next 4 ingredients in a bowl and combine. Add heavy cream and gently knead.
3. Roll out or form a 9 by 9-inch square.
4. Cut 9 pieces using a direct up and down motion avoiding lateral movement.
5. Bake 400 degrees for 12 minutes or until golden brown.
6. Combine ingredients in an electric mixer fitted with a wire whisk. Gently increase speed and whip for approximately 3 min.
7. Peaks should be stiff but not dry.
8. To assemble. Cut open biscuit, add strawberries with juice, top with whipped cream and serve. Make adjustments according to family member’s need or preferences.
