No Bake Tiramisu
The point of this recipe is simple recipes promote cooking and become "keepers". Any recipe that you make more than once promotes time in the kitchen and therefore develps your skills. I love this recpe for just this reason. Its also impressive when you pull it out for your family or guests. There are more complex recipes for tiramisu out there. None are this easy and to be honest they are not that much better. Who has time for that kind of nonsense? Definitely not you.
No Bake Tiramisu
· 8 ounces mascarpone or cream cheese
· 8–10-inch round angel food cake or lady fingers
· ½ cup powdered sugar
· 2 cup heavy whipping cream
· ¼ cp powdered sugar
· 1 cup espresso or very strong coffee
1. In medium bowl mix cheese with ½ cup sugar and 2 tablespoons espresso.
2. Beat until smooth.
3. In a separate bowl combine whipping cream and ¼ cup sugar and 3 tablespoons espresso.
4. Beat until stiff.
5. Fold ½ into the cheese mixture.
6. If using an angel food cake, cut it into 3 layers.
7. First layer cake and douse with a few tablespoons of espresso, followed by cheese mixture.
8. Repeat with second layer.
9. Finally, top with whip cream after.
10. Dust with cocoa powder or shaved chocolate.
11. Best if sets overnight.
