It's ubiquitous, but pumpkin spice in the fall is one of those things we are grateful 2020 has not taken from us! Baking is a healthy and mindful process to help cope with the stress of 2020. I have a healthier version of pumpkin scones that are super easy to make and make your house smell amazing. Let the kids help! It’s a great antidote for all the screen time they are getting right now.
Pumpkin Scone Recipe:
· 2 cups all-purpose flour
· 2 cups whole wheat flour
· 1 Tablespoon baking powder
· 1 tsp salt
· 2 tsp pumpkin spice
· 1 15 ounce can (slightly less than) of canned pumpkin
· 1/4 cup fat free Greek yogurt
· 2 eggs
· 1 1/2 cups granulated sugar
· 1 stick plus 2 tablespoons cold butter cut into pieces
· Glaze for scones
· 1 1/2 cup powdered sugar
· 1 tsp pumpkin spice
· milk 2 Tablespoons
1. Combine the first 5 ingredients in a bowl and set aside.
2. Combine the next 5 though granulated sugar and mix until combined.
3. Add the cold butter to the flour mixture and gently pinch with fingers until the consistency of course sand.
4. Add the wet ingredients to the flour butter mixture and gently combine.
5. Do not over mix.
6. Turn the dough out on a floured surface and cut into 24 pieces.
7. Bake 2 inches apart on a lined sheet pan with parchment paper.
8. Bake 400 degrees F for 15 min.
9. When completely cooled, mix ingredients for glaze and gently drizzle over the top of the scone.
10. Keep in an airtight container or refrigerate for up to 1 week.
