High Protein Bread Pudding

Keeping modified healthy desserts and snacks are great for keeping bellies full during the week cutting down on junk food intake. This easy bread pudding using leftover rolls from dinner and a little extra sandwich bread is just the thing. The secret ingredient adds extra protein which can be really helpful for those in the house that are not meat lovers.

 
 

Recipe:

·      12 slices of bread or equivalent (cubed or torn into bite size pieces) 

·      2 apples, peeled cored and cut into cubes 

·      16 ounces cottage cheese (LOW SODIUM) 

·      6 eggs 

·      2 cups milk 

·      1/2 to 3/4 cup sugar -adjust as needed 

·      1 tsp vanilla 

·      1 tsp cinnamon 

1.     Spray 13x9 inch baking dish with nonstick spray. 

2.     Layer bread and apples into the dish. 

3.     In a blender, blend cottage cheese until smooth. 

4.     Add the remaining ingredients and blend on low until combined.

5. Bake at 350 degrees for 45 to 55 minutes
