Cranberry Sorbet with Prosecco

Cranberry Sorbet with Prosecco! A lighter dessert or pallet cleanser for the holidays. Seriously, this might be the best recipe I have ever written! It's super easy. It's a make-ahead recipe that keeps the holiday free for other fun stuff. It does require an ice cream maker and a blender! Check my affiliate links for my preferences.

 
 

Recipe: 

·      12 ounces fresh cranberries 

·      1 and 1/2 cups sugar 

·      2 cups prosecco 

·      1 cup water 

·      2 tablespoons corn syrup juice 

·      zest of 1 lemon 

·      1 small pinch of salt (1/4 tsp) 

1.     Combine everything in a pot and cook on medium high until the cranberries are open and soft (about 15 minutes).

2.      Let cool until and puree in batches until smooth. 

3.     Strain through a fine mesh strainer. 

4.     Discard the pulp and refrigerate the liquid until completely cooled or overnight.

5.     Freeze in an ice cream maker according to directions. 

Can keep for up to a week in the freezer.
